You want to eat your vegetables.
Really, you do.
In fact, one of the biggest food trends of the moment is being a "vegivore." The natural next step for the locavore (locally grown and raised food) is to put produce center plate and let the proteins act as seasoning.
The idea has been featured on "60 Minutes" and Emeril Lagasse declared on "Good Morning America" his intention to downplay meat and play up veggies.
It's a little soon to predict if this trend will fully hit the Twin Cities, but there is a "flora" three-course meal at Heartland and Corner Table has quite a few colorful in-season options options. A few of our favorite vegetable dishes (sadly sides) include carmelized brussel sprouts with honey and almonds at Bacio and Zelo, beets and avocado with citrus at Bar La Grassa, roasted cauliflower at Lurcat (pictured), and butternut squash with gorgonzola and maple syrup at 112 Eatery.
Now if we could just get all of these dishes in one place -- that would be garden variety.
