Lately your version of a Mexican escape is watching Salma Hayek on Ugly Betty repeats with a Corona Light. Translation: low point.
Up the ante and head over to Rojo (translation: red), which opens today just west of the border (The West End, that is). The reasonably priced menu offers a fiesta of traditional Mexican with a twist: tacos (from fish to carnitas) seriously fresh guacamole, enchiladas and quesadillas, all made with a signature top secret spice blend.
Owners Michael McDermott and Jason Merritt are no strangers to the business. Amongst their qualifications, McDermott's mom was the namesake for Chi-Chi's.
Don't forget to tour the margarita menu with a strawberry jalapeno number with touch of heat.
All bound to lift your spirits.
Rojo, 1606 W. End Blvd., St. Louis Park, 952-657-5385.
